1/2 Cup of Softened butter
1/2 cup packed brown sugar
1/4 cup white sugar
1 egg
1/2 tsp vanilla
1/2 cup of flour ( I used whole wheat)
1/4 cup cocoa powder
1/2 tsp of Baking Soda
1 1/2 cup rolled oats
1/2 cup of Chocolate Chips
1/2 cups Coconut
1/2 cup chopped walnuts
Cream together butter with sugars, egg and vanilla
Mix together dry ingrediants in a seperate bowl
Add the two mixtures together, once combined add in oats, chips, coconut and walnuts.
Bake at 350 for 11 min.

Papa Love
Peyton loves her papa so much that I thought I would dedicate one entry to them. I am pretty sure that Peytons favorite person in the entire world is her papa. No one can figure out exactly why she bonded with him so well but when papa is in the room... no one else matters..including me! Perhaps she loves him so much because he sneaks her jelly bellys when no one is looking for maybe its because he has patiently walked her back and forth, back and forth around the house forever soothing her since she was a baby. What ever the reason is.. Peyton definately loves her papa!


Hecla Island
Last weekend my parents took Peyton for the weekend and off we went to Hecla Island. It was a much needed break from being a fulltime mom. Dont get me wrong, I love staying home with my monkey but every once in a while a break is deserved. With another baby on the way soon we decided that now is the perfect time to get away.
Hecla Island Raddison resort was amazing. The rooms were gorgeous and very modern. The bathtub was giant and the tv was huge. The customer service was my favorite part of the trip. Everyone kept coming up to us and saying hi and we even got free drinks ( virgin for me:). I laid around at the mineral spa for the majority of the time I was there. I took nice long baths and got caught up on some tv viewing. The weather was pretty crummy but for a few hours the sun broke out so we took that as our chance to explore the island. There are hints of the Iceland culture everywhere but to be honest I felt like I was in the Eastern provinces more. The air was humid, the water was plentiful, the marina was full of boats and even the lighthouse was lite up.
